My kids are always in the cupboard looking for something to snack on. These peanut butter and honey granola bars make the perfect grab and go snack or a quick and healthy breakfast.
The ingredients in this recipe are similar to my Homemade Vermont Maple Granola recipe, but with the yummy peanut butter flavor and chewy texture, you’d expect from a homemade granola bar.
These granola bars are full of oats, peanut butter, and seeds, making them high in protein and whole grains, sure to curb the appetite for a couple of hours. They are sweet, but not overly sweet, making you want to go back for more, and more, and more. I’m pretty picky about what I put peanut butter in – it’s one of those ingredients that I love, but for instance will not eat it in smoothies or ice cream. I’m sure we all have our quirks about specific ingredients and what they should be in! However, peanut butter is excellent in these granola bars!
No-bake Peanut Butter & Honey Granola Bars
These are no-bake granola bars, but you do have to heat up the wet ingredients on the stovetop. By heating the wet ingredients, it allows the peanut butter, honey, and butter to thin out, so then it is easier to mix and coat your dry ingredients.
First you’ll simply combine all the dry ingredients except the chocolate chips in a medium mixing bowl and mix together.
Next, add the butter or oil, honey, and peanut butter to the saucepan on the stovetop. Heat on medium-low heat until it just starts to simmer.
Then, combine the wet and dry ingredients in the medium mixing bowl. Once well combined, add the chocolate chips and quickly combine and pour into the prepared dish lined with parchment paper. Slightly wet your hands and press the mixture down and evenly to the sides. Top with remaining chocolate chips and press into the top of the mixture.
Let the granola bars cool in the refrigerator for about two hours – I know, I know, two hours? Yes, it’s forever, but worth the wait for these scrumptious granola bars. Once the granola bars have cooled, pick them up out of the dish using the sides of the parchment paper (this is my go-to parchment paper). This will allow you to place them on a flat surface and easily cut the granola bars on your counter. You will see in the picture below that I used a rocker blade to easily and quickly cut my granola bars. It works perfectly in for this granola bar recipe. Check it out here! After you cut the bars, store in an airtight container for up to 1 week, but good luck, they won’t last that long! They store best in the fridge as they will stay together better. When they are room temperature, they tend to crumble. You can also put them in individual snack bags and refrigerate or freeze.
Pantry Substitutions
This peanut butter granola bar recipe is so versatile; you can use the ingredients you have in your pantry to make this.
- Use are crispy rice cereal for half the oatmeal
- Add nuts instead of seeds, like almonds, peanuts or cashews
- Put some dried fruit in your granola bars, such as dried blueberries, cranberries, apricots, or even dried apples
- Use coconut oil instead of butter. (I have two non-coconut lovers in my house so I use butter)

Peanut Butter Honey Granola Bars
Equipment
- Mixing bowl
- Measuring cups
- Baker's spatula or spoon
- Saucepan
- Baking dish
Ingredients
- ¾ cup creamy natural peanut butter
- ½ cup honey
- 2 tbsp butter or coconut oil
- 1 tsp kosher salt
- 3.5 cup quick oats
- ¼ cup ground flaxseed
- 2 tbsp chia seeds
- ⅓ cup green pumpkin seeds (pepitas)
- ¼ cup raw sunflower seeds
- 1 cup semi-sweet chocolate chips
- ¼ cup semi-sweet chocolate chips
Instructions
- Line a 9×13 dish with parchment paper. Set aside.
- In a small saucepan, add peanut butter, butter, honey, and salt. Heat on medium heat stirring constantly until bubbly.
- Combine oats, flaxseed, chia seed, sunflower seeds in a medium mixing bowl.
- Pour the warm peanut butter mixture over the oat mixture. Stir until well combined.
- Quickly stir in 1 cup of chocolate chips and pour into prepared dish. With damp hands, press the mix into the pan until compact. Sprinkle with remaining chocolate chips and press into the mixture.
- Refrigerate for 2 hours. Take set granola out of the pan by using the parchment paper to lift it out of the dish and onto a cutting board. Cut into bars and enjoy!
